Malva pudding

METHOD

2 tbsp butter, tempered
2 tbsp apricot jam
150 ml sugar
1 egg
125 ml milk
125 ml white flour
1/2 tsp white wine vinegar
1/2 tsp baking soda

Whisk together butter, apricot jam and sugar. Fold inn egg, milk, flour, vinegar and baking soda.
Pour the mixture into a 22 cm pie dish. Bake at 200 ºC for about 15 minutes, or until done.

Serve with vanilla sauce and fresh berries
