Bush pig shoulder with quince

METHOD
1 large shoulder of bush pig (alternatively, pig or wild boar)
Salt and pepper
4 carrots, peeled and sliced
6 celery stalks, sliced
2 onions, sliced
1 large thumb of ginger grated
100 ml preserved quince or guava
1 bottle dry white wine
Serve together with preserved quince and samp, cooked in chicken stock.
